Beginning Knife Skills (LLC 1510)
Wish you could chop and dice and slice like Emeril? This class will teach you basic knife skills to speed up and simplify your time in the kitchen. Learn the correct knife to use for specific cutting jobs. Bring your knives and come prepared to practice.

Specialty Cooking

 

Appetizer Buffet (LLC 3995)Enjoy a culinary evening with a focus on appetizers.  Hot and cold appetizers will be featured in this demonstration class.  Our chef will guide you through the steps to prepare a variety of appetizers you may never have heard of. Enjoy repeating these at home for friends and family.  There will be plenty of tasting and recipes to take home.

Classic Comfort Foods (LLC 3671) Times are tough and money is tight, but dinner can still be a treat. These classic dishes are comforting, nostalgic and easy on the budget! Students will get hands-on instruction in preparing traditional American favorites. Not only will students get to sample several dishes, but they will get to prepare them in class and go home with a packet full of recipes sure to put a smile on their family's faces.

Honey, It’s Barbeque (LLC 3415) A honey of a backyard barbeque!   Join our chef’s delightful demonstration and learn techniques to prepare a fabulous summer barbeque.  Honey will be a highlight feature of each dish.  Begin with bruchetta with grilled shrimp and honey basil mustard, oriental salad, honey chipotle glazed salmon, honey glazed grilled vegetables and top it off with strawberry shortcake.  Recipes to take home and samples to taste will make this a honey of a cookout.

Quick and Healthy Weeknight Meals (LLC 4323)
Quick alternatives to fast food, these meals promise to be light on time and light on the waistline.  Learn to prepare quick and healthy culinary creations that will have your family looking forward to more meals at home and eager to toss the drive-thru menu.  This is a demonstration class with recipes to take home and a generous assortment of samples to taste.

New! Kids in the Kitchen (LLC 4030)
Join a fun hands-on class for parents and kids devoted to getting kids started with cooking. Parent/child teams will enjoy working together to make simple, yet tasty creations, easy enough for kids to repeat on their own, but tasty enough to satisfy the entire family. Parents should enroll in the T1 section and each child in the TY1 section. Limit three children per adult, please.

 

Savory Soups (LLC 1504)
Soup is truly a staple of life.  As a beginning to an elegant multi-course meal, or a meal in itself, soup provides an opportunity for you to express your culinary skills.  Learn to prepare savory soups from scratch, including “too busy to cook” varieties.  Also includes techniques in stock preparation which is the basis of a great soup.  Demonstration course with tasting included.

Healthy Party Foods (LLC 3879)
"Parties don't have to pack a punch on your summer waistline! This class is loaded with low-fat, reduced-calorie, healthy and most importantly, delicious, recipes and ideas for your next dinner party, tailgating event, potluck or picnic. Students will sample lots of tasty treats and be given many tips and tricks for "lightening up" their summer family party favorites."

Old Naw’Lins Cookery (LLC 3629)
Students will learn techniques of gumbo, jambalaya and etouffés (shrimp/crawfish). Bread pudding and southern pecan pie will provide sampling delights. Students can taste delicious New Orleans cuisine and observe cooking demonstrations as a learning experience.

Cooking with Beer (LLC 4071)

With all of the unique and flavorful beers readily accessible today, it is not just a great beverage it makes a wonderful flavor enhancement when cooking!  In this demonstration class, our chef will guide you through the steps of using beer to give a new flair at your dinner table. Enjoy recipes to take and samples to taste with a lineup of; Beer Battered Shrimp with a sweet onion glaze, Roasted Chicken braised with onions and mushroom in a beer reduction, Risotto, French onion soup and Beeramisu for dessert.
Please note beer will not be served as a beverage. 

 

Jams and Jellies (LLC 4266)
Learn to make your own homemade jams and jellies in this demonstration class. Basics including preservation and safety, food selection, and how to avoid food spoilage, will be the focus topics.

Water Bath Canning (LLC 4268)
Learn to preserve your own fruits and high acid vegetables in this demonstration class. Canning basics including safety, food selection, and how to avoid food spoilage, will be the focus topics. Canning tomatoes and peaches will be demonstrated.

Freezing Techniques (LLC 4269)
Freezing is one of the easiest methods of preserving food. This demonstration class will focus on advantages and disadvantages of freezing, food safety and selection, the importance of pretreatments and how to blanch a product for freezing. Focus foods will be garden favorites such as corn, beans, tomatoes and zucchini.

Gluten Free Cooking (LLC 4267)
With taste! Gluten free can be one of the most challenging diets to cook for. Join this demonstration class for tips and techniques to meet the challenge with flavor. There will be plenty of tasting and recipes to take home.

Join in a fun, hands-on class and learn icing techniques for decorating your fall themed cakes, cookies and cupcakes.  From borders and edging to fun fall flowers you will enjoy this creative course.  This is a foundation course upon which to build future intermediate and advanced skills.  All supplies will be provided.

New! Holiday Cake Decorating (LLC 4321)
Join in a fun, hands-on class and learn icing techniques for decorating your holiday themed cakes, cookies and cupcakes.  From borders and edging to special holiday flowers you will enjoy this creative course.  This is a foundation course upon which to build future intermediate and advanced skills.  All supplies will be provided.

New!  Holiday Gum Paste Flowers (LLC 4322)
Learn how to make gum paste flowers that will perfect your holiday bakery.  In this hands on class you will learn to and practice making three varieties of flowers; the rose, the lily and the daisy.ˇ This class is for decorators with experience.  All supplies will be provided.
Beginning Cake Decorating (LLC 4263)
Explore the exciting world of cake decorating, so popular today. Gain confidence to share newfound talent immediately with family and friends. Learn to prepare cakes for decorating by torting, filling, icing and smoothing. Icing bag preparation, utilization and angulation are covered as well as instruction in fundamental elements of cake design. Learn to make basic decorations including stars, outlines, flowers, leaves and shell bordersusing a variety of decorating tips.This is a foundation course upon which to build future intermediate and advanced skills. All supplies will be provided.

Healthy Breads, Grains and Whole Wheat (LLC 3874)
Join in the first of a series of hand-on bread baking classes with a real Certified Master Pastry Chef. Healthy Breads, Grains and Whole Wheat breads will be the focus of this exciting day. Enjoy learning to bake breads at home, start new family traditions as you delight in providing your family with healthy whole and multi-grain breads. All supplies are included and participants will be able to take their creations home to share. 

Old World European Style Breads (LLC 3875)
Learn the art of baking gourmet crusty French and Italian breads with a real Certified Master Pastry Chef.  This European trained chef will lead you in a hands on day of baking from the fermentation of the yeast to the shaping and baking of these oh so amazing old world recipes.   Your home will smell like a patisserie as you create these amazing recipes and one of kind loaves of bread for family and friends! Whether for special occasions or to enhance every day meals you enjoy the art of bread baking. All supplies are included and participants will be able to take their creations home to share.

White Breads and Rolls (LLC 3877)
The holidays are approaching. Delight your family and friends with homemade traditional white breads and rolls. Tired of all the preservatives and chemicals in store bought white breads and rolls?  Well, roll up your sleeves and get ready to knead your way to a healthier bread choice for your family!  Whether it’s for a lunch time sandwich or a savory dinner roll, you’ll enjoy baking traditional breads with our Certified Master Pastry Chef who will guide you through the process. All supplies are included and participants will be able to take their creations home to share.

 

Culinary Arts - Wines

Wine 101(LLC 4117)
Enjoy an introductory course covering wine education. You will learn a range of information including the importance of swirling your glass, what regions grapes are grown in, how to store wine, how to buy a wine based on your palate and how to detect the nuances and passions regarding the grape. You will learn the five simple steps of wine tasting. Wines will be tasted followed by an in-depth discussion on how to distinguish each flavor present. You will leave feeling more confident about selecting wine in a restaurant or purchasing wine when confronted with the wall of wine choices.  Must be 21 or older to register and bring valid ID to class.

Italy through Wine (LLC 4198)
Taste your way through Italy with white and red wines. Discover why northern Italy makes the best white wines and explore the lighter reds from the A?bruzzo region. Taste the hills of Tuscany through the Sangiovese grape and finally land in Sicily. Learn how you can never go wrong with a wine from Italy! Must be 21 or older to register and bring valid ID to class.

New! Champagne and Sparkling Wines (LLC 4324)
Just in time for the holidays, take a tasting trip through the world of champagne and sparkling wines.  Whether for your holiday parties, a special event or just to expand your list of favorites, join this tasting event focused on champagnes and sparkling wines that are a treasure for the pallet yet easy on the wallet. Must be 21 or older to register and bring valid ID to class.

New! Food and Wine Pairing (LLC 4325)
Join a culinary experience that will be a memorable event.  Appreciate the combined flavors of four courses of gourmet foods and the wines that complement their flavors.  Enjoy an appetizer, soup, main course and a dessert with a wine carefully paired to please.  Learn about the wines, the foods and why they complement each other.  Informative information about each wine along with recipes for each course will be given.
