Our chef will guide you through the steps to prepare a variety of appetizers you may never have heard of. Enjoy repeating these at home for friends and family. There will be plenty of tasting and recipes to take home.
Classic Comfort Foods (LLC 3671) Times are tough and money is tight, but dinner can still be a treat. These classic dishes are comforting, nostalgic and easy on the budget! Students will get hands-on instruction in preparing traditional American favorites. Not only will students get to sample several dishes, but they will get to prepare them in class and go home with a packet full of recipes sure to put a smile on their family's faces.
Honey, It’s Barbeque (LLC 3415) A honey of a backyard barbeque! Join our chef’s delightful demonstration and learn techniques to prepare a fabulous summer barbeque. Honey will be a highlight feature of each dish. Begin with bruchetta with grilled shrimp and honey basil mustard, oriental salad, honey chipotle glazed salmon, honey glazed grilled vegetables and top it off with strawberry shortcake. Recipes to take home and samples to taste will make this a honey of a cookout.
Quick and Healthy Weeknight Meals (LLC 4323)
Quick alternatives to fast food, these meals promise to be light on time and light on the waistline. Learn to prepare quick and healthy culinary creations that will have your family looking forward to more meals at home and eager to toss the drive-thru menu. This is a demonstration class with recipes to take home and a generous assortment of samples to taste.
New! Kids in the Kitchen (LLC 4030)
Join a fun hands-on class for parents and kids devoted to getting kids started with cooking. Parent/child teams will enjoy working together to make simple, yet tasty creations, easy enough for kids to repeat on their own, but tasty enough to satisfy the entire family. Parents should enroll in the T1 section and each child in the TY1 section. Limit three children per adult, please.
Savory Soups (LLC 1504)
Soup is truly a staple of life. As a beginning to an elegant multi-course meal, or a meal in itself, soup provides an opportunity for you to express your culinary skills. Learn to prepare savory soups from scratch, including “too busy to cook” varieties. Also includes techniques in stock preparation which is the basis of a great soup. Demonstration course with tasting included.
Healthy Party Foods (LLC 3879)
"Parties don't have to pack a punch on your summer waistline! This class is loaded with low-fat, reduced-calorie, healthy and most importantly, delicious, recipes and ideas for your next dinner party, tailgating event, potluck or picnic. Students will sample lots of tasty treats and be given many tips and tricks for "lightening up" their summer family party favorites."
Old Naw’Lins Cookery (LLC 3629)
Students will learn techniques of gumbo, jambalaya and etouffés (shrimp/crawfish). Bread pudding and southern pecan pie will provide sampling delights. Students can taste delicious New Orleans cuisine and observe cooking demonstrations as a learning experience.
Cooking with Beer (LLC 4071)
With all of the unique and flavorful beers readily accessible today, it is not just a great beverage it makes a wonderful flavor enhancement when cooking! In this demonstration class, our chef will guide you through the steps of using beer to give a new flair at your dinner table. Enjoy recipes to take and samples to taste with a lineup of; Beer Battered Shrimp with a sweet onion glaze, Roasted Chicken braised with onions and mushroom in a beer reduction, Risotto, French onion soup and Beeramisu for dessert.

Freezing is one of the easiest methods of preserving food. This demonstration class will focus on advantages and disadvantages of freezing, food safety and selection, the importance of pretreatments and how to blanch a product for freezing. Focus foods will be garden favorites such as corn, beans, tomatoes and zucchini.
