Food Services Committee Summary October 20, 2008 

Summary of Meeting with Joliet Junior College on Wednesday, October 20, 2008 at 2 pm at Joliet Junior College. These notes record our understanding on items discussed and decisions made at this meeting. Please notify us within seven (7) calendar days of any necessary additions or corrections.

Items Discussed

  1. The group discussed two dining room options. Both had the ability to close off the "A" concourse and force circulation around/through dining room. Each had a similar connection to A building. Option A had 346 seats and Option B2 had 398 seats. Both options could increase/decrease the number of seats.
  2. Option A Comments:
    • Judy noted that we should align the South entry with Vet tech entry
    • The five separate dining rooms are too many. Cleaning may be a problem
    • May consider moving a building separation to the East 10 feet for access to kitchen from dining room
  3. Option B Comments:
    • Option B was preferred
    • Need to modify ramps so that we have full accessibility
    • Condiments need to be closer to cashier
    • South 60 seats not needed
    • Increase the number of upper level seats and make circle larger
    • All of dining should have a "Border's or Starbuck's" feel
  4. Café shape may need to narrow to allow more space at cashier. Cashier area to have three single cashier stations plus one at café
  5. Studied the servery. Soup/salad may switch. Entry should be reworked. Need to free up space near cashier.
  6. Discussed kitchen. Move catering and accounts office to have access to kitchen. Ice may be in alcove off service corridor. Other storage and freezer/refrigerator moves discussed. Overall work area could decrease but add catering storage.
  7. Next meeting with faculty senate, food services staff and student senate, next Thursday, October 30.
