I have been an executive chef in Europe and the United States before I began teaching some 20 years ago for Joliet Junior College. I love my job and my students. Joliet Junior College is a wonderful learning and working environment. My philosophy on food is to ensure my students learn the basic principles of cooking and that I keep myself up-to-date on the industry and the new trends in the preparation of different types of foods. My philosophy on teaching is to give my students the best learning and realistic environment I can. I love to watch them mature and have as much love for this industry as I have. I always tell my students that I prepare you for the hospitality industry. However, if you want to make a career as a chef in our field, you must go out and find yourself the best chefs in our business and work for them. Then and only then will you have a secure future. |
